Sunday, January 16


This morning was a lot like yesterday. We all slept in and I spent the morning/afternoon working on reading for my classes this week. As a study break, my Mamรก gave me some delicious tropical fruit with yogurt and granola. I've never eaten papaya or pineapple much before, but they were both fabulous in this dish. I started a food journal and I'm looking forward to bringing that part of Costa Rica home with me!
My host family attends a Catholic church that meets at 4:00, so later in the afternoon we started getting ready to go to mass. I was a little nervous for this experience, not knowing exactly what I was getting myself into, but it went really well. Their church was beautiful and the mass went really quickly. After church, we played a few card games, ate dinner, and watched some TV before bed. In all, it was a very easy-going weekend, and I'm ready to dive into my first day of classes tomorrow!

    I’m especially anxious to learn more from you (when you get home) about the food. We absolutely loved the food when we were in Belize; I’m assuming the cuisine is similar. The bananas, mangoes, papayas, and pineapples were incredible. We also loved the homemade tortillas, beans & rice, salsa, avocados, jicama, white cheese, and habanero pepper sauce. YUM! Does the family that you live with grind their own maize? Hope your first day of classes goes well. Here's a little something to think about...
    Lord, open my eyes. Help me to see your grace at work in my life. Amen

  2. Thanks, Stacy! Its good to hear from you! Someday when I get home we will have to do some cooking together with the new recipes I am getting! All of the fruit here is delicious, and I'm never scared to try anything because I haven't been disappointed yet! My host family doesn't grind maize, but that was the main ingredient in the tortillas we made. Thanks so much for the prayer...its important to remember God's work in everything I'm doing and seeing every day!
